Nose: Fresh, clean and very aromatic. Floral notes abound the senses with a light grassiness. Notes of creamy Manuka honey and a touch of juicy citrus with cream and a well-balanced sweetness.
Palate: Rather full with a pleasant depth. Lurking somewhere in the substratum a grilled orange lies. Notes of granary toast and green tea with jasmine. A touch of sweetness.
Finish: Quite long with peppery spice and wood shavings.

To create 15 Year Old Viking Heart, Gordon Motion, Highland Park’s Master Whisky Maker, selected predominantly sherry seasoned European oak casks to deliver warm, spicy notes and sherry seasoned American oak casks to provide a balance of sweet vanilla. Expertly adding just a few refill casks to soften and smooth the flavours, Gordon chose to bottle at 44% ABV to allow the whisky’s vibrant fruitiness and distinctive heathery peat smoke to shine through. This is a wonderfully rich and complex single malt. Opening with rich and spicy aromas of crème brulee, heather honey and crumbled cinnamon, intensely fruity notes follow – fresh pineapple dressed with a scattering of sun-kissed lemon zest. There’s a hint of freshly-baked sponge cake too, warm from the oven, and you’ll find cinnamon again, but toasted shards this time. Citrus and vanilla notes linger in the aromatic waves of peat smoke.

Over time, each cask has developed its own distinctive character, and the culmination of this marriage is a brilliant flavour profile of rich vanilla and honey fudge against a backdrop of smouldering Orkney peat and salty sea spray.

This particular Orkney single malt, of undisclosed origin, was distilled in 2005 and bottled at 17 years of age in 2023, without the addition of colouring or chill filtration, for inclusion in Signatory Vintage’s Cask Strength Collection. To avoid any confusion with Scapa, the bottler has helpfully labelled this as Orkney 17-year-old (HP), with additional details indicating that the whisky was matured in a first-fill Oloroso sherry butt, resulting in a yield of 612 bottles at its natural cask strength of 55.3%. These incognito Highland Parks tend to sell out quickly, so those interested in purchasing a bottle are advised to act fast.
