Created by carefully selecting exceptional sherry and bourbon casks from the Glencadam’s historic warehouses.  These casks have been expertly married then finished in Oloroso Sherry butts specially sourced from Andalucia, Spain.  Finishing helps the whisky to develop refined characteristics, which give more depth, complexity and flavour.  When the malt whisky flavour notes had reached perfect harmony with the subtle sherry notes, the whisky was bottled unchillfiltered at 46%.

    Glendronach 15 Revival

This is a whisky whose original incarnation was so popular that we drank all of it now It’s back with a new recipe thanks to master blender Rachel Barrie, combining both oloroso and PX casks into a rich sherry-monster that’s packed with spice and fruit.

Nose Fruit cake for grown-ups: not too sweet, thanks to softly singed raisins, and solidly soaked in bittersweet dark rum. Baked apples with plump raisins, brown sugar and cinnamon sit to the side, studded with glacée cherries and juicy sultanas.
Palate Rich, thick and packed with juicy-but-dried fruit – rum-soaked raisins, prunes and a touch of chopped date. Nutmeg and cinnamon sit underneath along with sticks of black liquorice. It’s more savoury than the nose suggests, focusing on fruit cake and bitter dark chocolate.
Finish Damp leaves and a hint of mint. Raisins and dates linger.

Up to six years from oak forest to Glengoyne’s Highland Distillery is how long it takes before sherry casks are finally ready to receive the spirit.  Even then, the journey has just begun.  Time and wood work together over the next eighteen years to create the intense gold colour and wonderful mouthfeel of Glengoyne 18 year old.  It is perhaps the perfect balance of complex oak, traditional skills and barley dried by air, never peat.  Spicy vanilla fruit, ripe apples and a rich, luxurious mouthfeel. This is the result of 18 long years and a generous proportion of first-fill sherry casks. And of the patience we take over the slowest distillation in Scotland.

The first bottling of this new series Chapter One, this first release to honour Cochrane Cartwright, the legendary distillery manager who transformed the Glengoyne distillery in 1869. He slowing the stills, making them the slowest in Scotland, and introduced sherry cask maturation. These changes brought a remarkable amplification of the sweet, fruity characteristics for which Glengoyne is now renowned. Chapter One has been matured in first fill European oak Oloroso sherry casks.  The combination of those with our prized refill casks allow the iconic sweet, fruity house style of Glengoyne Distillery, to shine through. Bottled un-chillfiltered at 48%, the Highland Single Malt’s deep amber hue is imparted from time and wood alone.

    Laphroaig Quarter Cask 70cl

This expression offers an irresistible doubling of flavour due to the double maturation in two casks made of American oak.  Still-maturing whisky from standard ex-bourbon barrels is transferred to quarter casks and left to rest in the Laphroaig Distillery warehouse just a stone’s throw from the Atlantic shore.  This process represents Laphroaig breathing new life into a once-defunct tradition: the use of the smaller cask size, which ensures increased contact with the oak, creating a soft and velvety edge to complement Laphroaig’s distinctive peatiness.  On the nose the sensation is toffee and caramel, caused by the vanillas and tannins of the American oak, plus a dryness from the wood oil.  The finish is long and alternates between this sweetness and smoke.

Poit Dhubh 12 Year Old 70cl

Nose – A bit of an off-note on the nose – still has that vanilla, cacao, smoky peatiness of the 8 year old. Apple, raisin, light nuttiness, a light sherry rancio note, earthiness, some candy notes, lemon, a slight off barnyard note as well. Reasonably complex, but the off-note takes away from the nose.

Palate – Vanilla, with some smoke, pear, and raisin…lightly off as found on the nose. Slightly bitter. Lightly sweet – just about right to balance out this whisky. There’s also some chilli pepper.

Finish – Smoky, fruity (apple/pear), creamy, caramel, pear, guava, slight nuttiness, light oak, and some more of that saffron. Lightly dry, with some white pepper playing in as well. The feel of the finish is quite good.
