Each release of Fettercairn 16 year old malt showases a maturation journey that enhances the tropical character derived from the copper cooling ring process. The 2020 release has been distilled with chocolate malted barley and matured in first fill American ex-bourbon casks, before being enhanced in select sherry and port casks. Chocolate malted barley is heavily kilned, rising to a temperature of 210 degrees over two hours, creating a rich flavour and dark roasted colour. Aromas of vanilla and ginger with sun kissed raisins. Succulent notes of peach, ginger and caramel give way to banana, with chocolate and demerara sugar delivering a perfect finish.
