The Pentland Hills offers an abundance of diverse natural resources. Gorse Flower, Heather, Wild Rosehip and Elderflower are painstakingly foraged by hand, dried and vapour infused in a copper basket during distillation.
Old Tom Gin is a gin recipe popular in 18th-century England. In modern times, it became rare but has experienced a resurgence in the craft cocktail movement.
