Fading light – the glow of the sun that never truly sets in the summer, or the dying light of short winter days. Known locally as the grimleens, the eerie dusk in Orkney has inspired many tales of ghosts and spirits.
Taste notes – Clean, bright, pale golden yellow colour. The nose is complex with estery notes of dried fruits, vanilla, cream and spice. The palate is smooth and long with hints of nuts and spice on the finish.

The Merchant ship Caroline set sail from Santa Cruz on the 3rd November 1724 en route to Genoa. The ship would never reach its destination. The reportedly terrible conditions onboard inspired second mate John Gow to instigate a mutiny, taking control of the ship. With Gow as her new captain, six extra canons were mounted on The Caroline’s deck – making a total of 18 – and she set out on a course for piracy under her new name: The Revenge.
Tasting Notes – Light funk, acidic fruit and caramel on the nose. Stone fruit, spice and toffee on the palate with over ripe peaches on the finish.

Pot Still style dry Spiced Rum (less than 5g of sugar per litre) with caramel and natural spices from around the world including two secret ingredients grown in Orkney.
Taste Notes – A light golden colour, with a smooth rounded sweetness. Subtle citrus notes with warm undertones of stem ginger. Flavours of soft moist ginger cake with oatmeal and cinnamon cookies, and a long warming spice finish. A prominent rum flavour complimented with spices, rather than an overload of spices masking any hint of rum.
