    A non age statement Single Pot Still Irish Whiskey containing pot still whiskeys aged between 7 & 10 years. The whiskey has matured in a combination of new bourbon and refill bourbon casks as well as sherry casks.  Triple distilled in copper pot stills, these whiskeys are praised for their full, complex flavours and uniquely creamy mouthfeel.  Aromas of fresh aromatic oils and spices with orchard fruits and barley on a background of toasted wood.  A full bodied spicy flavour with a hint of cloves along with the fruity sweetness of green apples, rounded off with toasted oak. A lingering finish with flavours of spices and barley.

    Rather than being simply a ‘finished’ whiskey, Yellow Spot is special in that it contains whiskey that has been matured for a full 12 year period in three oak cask types: American bourbon barrels, Spanish sherry butts, and uniquely, Spanish Malaga casks. The Malaga cask brings an exotic sweet note to the whiskey making it a truly delightful taste experience. Only extremely limited quantities of Yellow Spot have been bottled making it a whiskey to seek out and savour as a true rarity.  Aromas of mown hay & cracked black pepper, red bell peppers, nutmeg, clove oil & green tea, together with sweet honey & peaches from the Malaga casks.  Flavours of honey sweetness with pot still spices, fresh coffee, creamy milk chocolate & Crème Brûlée, rred apples & toasted oak.  A sophisticated and complex finish with a sweetness throughout, followed by a mix of red grape & dry barley upon exit.
