Fermentation stands as a crucial element in shaping Scotch Whisky flavours. In the second edition of the Workshop Series, distillers from The Borders Distillery Company conducted experiments with both very short 55-hour and extended 150-hour fermentations. Following double distillation and maturation in first-fill ex-bourbon barrels, these batches were blended with single grain whisky. This exclusive release, represented by WS:02 The Long & Short of it, maintains a chill-filtered 40% ABV and offers individual bottle numbering. Only 8,400 bottles are available worldwide.

The company’s House Rum, skillfully crafted by their distiller, undergoes a meticulous process. It is twice distilled using their custom-made copper pot stills, with only the middle cut of the 2nd distillation selected for use in MapMaker’s Rum. To create this exceptional blend, Caribbean rum is harmoniously combined with Loch Calder water, and under Hanna’s expertise, it is infused with a selection of local botanicals, including lemon verbena, scurvy grass, sea kelp, and Scottish sea salt.

It’s a botanical rum, not a spiced rum. Market Row blends Jamaican, Bajan and Dominican aged pot still rums from five distilleries; reflecting the local Caribbean culture in Brixton. Then it’s infused with Kenyan black tea, Nigerian hibiscus, Grenadian Mace and red rose from Pakistan amongst others. All ingredients are sourced locally from the traders in Brixton Market. It is a spirit without added-sugar, with botanicals chosen specifically to complement one another. The botanicals are subtle on the nose and palate: they add to the flavours instead of changing them.

Fireside 12yo Blended Malt – Fireside has light peat smokey flavours, as a result of the ancient process of drying the malted barley in kilns using peat as fuel, with the additional hints of grass and moss resulting from the reactions of the spirit for over 12 years in oak casks. The result is a powerfully heartwarming feeling and a complex dry finish. Fireside is the ideal companion to a fireside conversation with a friend.
