Fermentation stands as a crucial element in shaping Scotch Whisky flavours. In the second edition of the Workshop Series, distillers from The Borders Distillery Company conducted experiments with both very short 55-hour and extended 150-hour fermentations. Following double distillation and maturation in first-fill ex-bourbon barrels, these batches were blended with single grain whisky. This exclusive release, represented by WS:02 The Long & Short of it, maintains a chill-filtered 40% ABV and offers individual bottle numbering. Only 8,400 bottles are available worldwide.

Mermaid Gin from the Isle of Wight is created using ten ethically sourced botanicals, it is a smooth but complex blend of the freshness of organic lemon zest, the peppery notes in grains of paradise and a hint of sea air from fragrant rock samphire. Refreshing and invigorating.
This small batch gin has been handcrafted on the Isle of Wight since 2014. However, it has recently received a massive remodelling into this new and unique mermaid inspired eco friendly bottle.
The rock samphire is locally foraged from the space between the sea and the shore, the world of the free spirited mermaid. Boadicea hops are grown at the famous Ventnor Botanic Garden and our coriander seeds are the first to be commercially grown in England. The other botanicals – including angelica root, liquorish root and orris root – are sourced by a father & son partnership visiting families and farmers around the world.
