Crisp and refreshing served with tonic, charming in a Martini and captivating in a Negroni. Pocketful of Stones Marmalade Old Tom Gin 70cl

The One Made For Toasting
A favourite treat of Anne Boleyn and her ladies in waiting, marmalade has long been a British breakfast tradition. Pockerful of Stones Distillery have taken the archetypal flavour of the Seville orange and distilled it with a gorgeous combination of botanicals, infused more Seville Orange peel and then added a slight sweetness to create a citrus-forward, contemporary gin built on the backbone of British tradition. Old Tom Gin, as a style, is a little sweeter than a London Dry. This is no exception, but not too sweet to put off the gin purists out there. They have upped the ante on their dry gin with added seville orange peel, a little star anise and some liquorice root at the point of distillation; then infused the gin with traditional marmalade for two weeks and brought the ABV down to 40% with hand squeezed orange juice.
The result is a smooth, citrus forward gin with mouthfeel well rounded enough to drink by itself, with tonic, in a Negroni or, in the cold of winter, a Marmalade Hot Toddy.

Poit Dhubh 12 Year old 5cl
View productPoit Dhubh 12 Year old 5cl
Nose – A bit of an off-note on the nose – still has that vanilla, cacao, smoky peatiness of the 8 year old. Apple, raisin, light nuttiness, a light sherry rancio note, earthiness, some candy notes, lemon, a slight off barnyard note as well. Reasonably complex, but the off-note takes away from the nose.
Palate – Vanilla, with some smoke, pear, and raisin…lightly off as found on the nose. Slightly bitter. Lightly sweet – just about right to balance out this whisky. There’s also some chilli pepper.
Finish – Smoky, fruity (apple/pear), creamy, caramel, pear, guava, slight nuttiness, light oak, and some more of that saffron. Lightly dry, with some white pepper playing in as well. The feel of the finish is quite good.

Crafted exclusively for us by Bodegas Baron in South West Spain, Pedro Ximénez (or PX) takes its name from the white grapes that form the base of this exquisite wine. Following harvest, the luscious fruit is carefully laid out on mats and sun-dried, allowing the water to evaporate and the grapes to naturally ‘raisin,’ intensifying the sugars. The pressed grapes yield a syrupy juice, known as grape must, which undergoes fermentation and matures in a solera. This versatile wine, cherished by mixologists globally, pairs perfectly with cheeses and desserts, making it a delightful choice for a variety of occasions.

On the second floor of the bar resides a Ginstitute, a gin museum and educational center where guests are educated in all things gin. Jake Burger (bartender) and Ged Feltham (proprietor) spent nine months experimenting before the settling on a recipe. Their gin is made from a base of English wheat neutral spirit and 9 botanicals including juniper, orris root, coriander, licorice root, and nutmeg. It is distilled to their specs at the Thames Distillery in London and is then prepared for bottling with additional neutral spirit and water. It is bottled at 42% ABV.
