A richly honeyed Cardhu with lush, tropically sweet, rum cask-rounded flavours and peppery wood-spice, which combine to create a vibrant taste of paradise. Light on its feet, lush and sweet while also lively and fresh, with a surprisingly spicy, peppery finish, so making an especially exotic apéritif malt.
Appearance: Clear gold.
Nose: Beguiling first impressions begin with the fresh, sweet fruitiness of lemon zest and white grape enriched by exotic notes of pink grapefruit and ripe mango, all on a faintly mossy base, a note that evolves into freshly ironed linen. A notably spicy and woody note soars high above. A drop of water dries these aromas and introduces a pinch of white pepper.
Body: Light to medium.
Palate: A creamy-smooth and full texture, the taste erupting with sweet flavour. Tingling on the tongue, the fruity and malty sweetness behind this suggesting home- made rum toffee and more exotic hints of spiced pineapple and green banana, made more appetising still by spicy and drying, bracingly crisp, clean oak. A dash of water creates a delightful and even smoother texture, still strong in peppery spice.
Finish: Quite short, sweet and peppery. With water, the oaky spiciness is even more forward.

The master brewers behind Ola Dubh employ an intricate and complex process to craft this exceptional beer. Beginning with a combination of roast barley, pinhead oats, and malted barley, the mixture is then placed in the mash tuns, where the yeast struggles to move around in the thick, viscous beer, resulting in a slower fermentation process. The base beer, Old Engine Oil, is then carefully placed in casks that previously held 16-year-old Highland Park Whisky, where it remains for a minimum of six months. During this maturation period, the flavors from the wood interact with the beer, resulting in a beautifully crafted brew with complimentary whisky notes and a bittersweet aftertaste, complete with hints of chocolate and roastiness. The creation of Ola Dubh is a true labor of love by the master brewers who pour their hearts and souls into producing this exceptional beer.

Tomintoul 16 Sauternes Cask Finish 70cl

Tomintoul Distillery built in 1965, within the picturesque Cairngorms National Park. Tomintoul Sauternes Cask Finish was distilled in 2004 and matured initially in ex bourbon American oak casks before being finished in French oak casks which previously contained Sauternes wine to add depth and complexity with stone fruits, honey, marmalade and spice. The finished whisky is elegant and intricate, bottled at natural colour and non-chill filtered.
Tasting Notes
Nose: Fragrant aromas of yellow fruits and orange marmalade mingled with ruby grapefruit, lemon drizzle cake and honeysuckle.
Palate: Tangy and sweet with layers of acacia honey, dried papaya and Galia melon bound with sweet choux pastry, cardamom and soft tobacco spices.
Finish: Lemon curd and apricot jam fading into a cinnamon, baked apple and toasted oak linger.
Limited release of only 5,094 bottles.
